"Casuela" Mexican Pottery-Cooking Dish

Picadillo Con Papas’

There are few things more delicious than Authentic Mexican Food, such as ‘Picadillo Con Papa” (Authentic Mexican beef stew.) There is nothing more autahentic than when it is cooked using a “Casuela” (Mexican dish.) And of course, we can’t forget that “Authentic Mexican Seasoning.”

Ingredients:
·2 pounds lean ground beef
·3 small potatoes-with or without skin, cut into ¼ or ½ inch cubes
·1 can tomatoes sauce -8 oz can
·1 med diced tomatoe
·1/2 small clean sliced bell pepper
·1/2 small sliced or finely diced onion-preferably white,
·1/4 cup cilantro, coursed or chopped
·1 teaspoon ‘authentic mexican seasoning’

1 teaspoon salt (or to taste)
·1 ½ cups to 2 cups water

Preparation:
· Put the ground beef in a skillet at medium heat turning occasionally while seasoning it with salt and pepper.
·When beef is browned ·Add ½ can tomatoes sauce,
1 cup of warm water, 1 1/2 teaspoons of ‘”Authentic Mexican Seasoning,* potatoes, bell pepper and onions,
·If you desire a spicy dish, add two uncut Serrano peppers with the stem (caution: do not break serrano peppers in your skillet)
·Cover with lid and simmer for 30 minutes stirring occasionally until potatoes are tender,
*After cooking for 30 minutes add cilantro, and if desired, add additional tomatoe sauce and water for a thicker or lighter broth.
*Turn off and let sit for 20 minutes before serving.

Compliment with Authentic Mexican tortillas, rice, beans and salsa.

Authentic Mexican Recipe  Nachos

Although nachos are not a traditional Mexican food, most people still equate Nachos with Mexican fare (much like pizza is considered Italian food.) So enjoy this crunchy, cheesy snack with all of your favorite toppings.

Prep Time: 15 minutes

Cook Time: 5 minutes

Ingredients:

  • 3 oz Tortilla chips (about 2 large handfuls)
  • 2/3 cup shredded cheddar or mozzarella
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/2 cup re fried beans or whole black beans, drained of liquid
  • 1 small tomato, seeded and diced
  • 1/2 cup green onions, chopped
  • *Optional- Other topping ideas include sliced black olives, white or red onions and jalapeno rings
  • *Optional- 1 cup of diced carne asada, carnitas or shredded chicken

Preparation:

Pre-heat broiler on high. Heat re fried beans over low heat until bubbly. Place half of the chips on an oven proof pie plate and cover with half the cheese. Carefully add the rest of the chips topped with the remaining cheese. Place under the broiler for 5 minutes or until cheese is melted. Carefully remove chips from broiler and drizzle on beans. Then add dollops of guacamole, sour cream and lastly, sprinkle on the tomatoes. *If adding meat, freshly cooked is the best option, or re-heat pre-cooked meat until piping hot. Add right after the beans layer. Not being a truly authentic Mexican food still makes this a favorite Mexican recipe. Go and figure. None the less, remember to enjoy!

Authentic Mexican Recipe  Tequila Twist

Chelsea Kenyans’ Tequila Twist

This authentic Mexican recipe of Tequila Twist is made of a combination of of tequila and citrus. Makes 5 to 6 shooters. Ingredients:

  • Ice for shaker
  • 6 oz. tequila
  • 1 cup (8 oz) orange juice
  • 1 oz fresh lime juice
  • finely grated rind from 1/2 of a lime
  • sugar
  • 5 strawberries or orange wedges

Preparation: Place 5-6 large shot glasses in the freezer until frosty. Use a lime wedge to moisten the rim of each glass and dip the rim in a small plateful of sugar. In a shaker combine tequila, orange juice, lime juice and lime rind. Shake vigorously for 10-20 seconds until ingredients are incorporated. Let it sit for about a minute to allow the lime rind to flavor the mixture. Add ice to shaker, shake again to cool and then pour into each glass. Garnish each glass with a strawberry (optional to use an orange slice to garnish). This is one of many authentic Mexican recipes for beverages using tequila. Remember that all is moderation is good. Mexican Music

Several years ago I had the privilege of seeing Julio Iglesias perform for two hours non-stop. We sat probably ten feet from where is was as my husband and I had a booth right in front of him. I must say, his music, his charisma and just everything about him was so romantic. I remember telling my husband that everyone there fell in love. In love with him, with life, with whoever you were with. Truly unexplainable. Enjoy!

Authentic Mexican Recipe  Shrimp Ceviche

Ceviche De Camaron Shrimp Ceviche

Of the thousands of authentic Mexican recipes, this is one of the most popular. It makes a great appetizer full of shrimp cooked in lime and lemon juice, fresh cucumber and red onions. A serrano chile or tabasco sauce gives the ceviche a spicy bite and a little tomato sauce adds some smoothness. Serve with corn chips, celery sticks or other vegetables. Impress your friends with this fresh recipe at your next fiesta! Inspired by the seaside villages in Puerto Vallarta this ceviche is a great low fat snack or appetizer. Prep Time: 20 minutes

Cook Time: 3 hours, 00 minute

Ingredients:

  • 3 lbs small raw shrimp, cleaned
  • 4 large tomatoes, seeded and diced
  • 6 limes, juiced
  • 4 lemons, juiced
  • 1 cup cilantro leaves, chopped
  • 1 serrano chile, seeded and finely chopped
  • tabasco hot sauce, as desired
  • 1/2 of a cucumber, peeled and diced
  • 1 red onion, diced
  • salt and pepper to taste
  • 3 tablespoons tomato sauce

Preparation:

Lay out shrimp in the bottom of glass baking dish. Pour lemon and lime juice over them and refrigerate for 3 hours. The juice will “cook” the shrimp. Toss with remaining ingredients and refrigerate for one more hour or longer. Enjoy with tortilla chips or as a topper for grilled fish!

I could not resist posting this Mexican recipe. It’s amusing, to say the least. Enjoy! Authentic Mexican Recipe  Albondigas Chipotle I found this Mexican recipe very entertaining. Depending on your feedback, I’ll decide to post similar videos.

Albondigas Chipotle

This authentic Mexican Recipe of Albondigas Chipotle is a delicious spicy dish. The chile chipotle is a favorite in Mexico.

Albondigas/Meatballs:

1/2 lb Beef, ground finely
1/2 lb Pork, ground finely
1/3 c Onions, finely chopped
2 tb Flour
1 tb Cilantro, fresh minced
1/2 ts Oregano, dried
1/4 ts Cumin, ground
1 Egg, beaten
3 tb Vegatable oil

Sauce:
1 tb Vegatable oil
1 Onion, chopped
2 Garlic cloves, chopped
1 c Tomato sauce
2 Chipotles, canned in adobo
-sauce, stemmed and chopped
2 tb Adobo sauce (from chiles)
1/2 c Beef broth

Tortilla Cups:

6 Flour tortillas (6 inch)
Vegatable oil for frying
Chopped lettuce

Preparation

MEATBALLS

Combine all the meatball ingredients, except the oil, and mix well. Form into 1 1/2-inch balls. Brown the meatballs in the oil, remove, and keep warm. SAUCE: To make the sauce, add the oil to the pan and saute the onion and garlic until soft. Add the remaining sauce ingredients, bring to a boil, reduce the heat, and simmer for 15 to 20 minutes until the sauce is thickened. Place the sauce in a blender or food processor and puree until smooth. Return the sauce to the pan, add the meatballs, and heat through. TORTILLA CUPS: To make the tortilla cups, pour the oil to a depth of 3 inches and heat to 375 degrees. Place a tortilla in the oil and let it float for a couple of seconds. Press the center into the oil with a can or ladle to form a bowl and fry until crisp, remove, and drain. To serve, place the lettuce in each of the tortilla cups, top with the albondigas, and serve.
